Chocolate Chip Thins Gluten Free Cookies

Can you say thin, rich and gooey! These Chocolate Chip Thins are gluten free cookies which tase absolutely amazing! Packed with chocolate chunks and the perfect blend of brown and white sugar, these cookies are guaranteed to be the best gluten free cookies you’ve ever made—and shared (if you can bring yourself to sharing them).

What makes these gluten free cookies so good is the unblanched almond flour we use. It is full of flavor and texture and since it is made from unblanched almonds (not almond meal), you will also get the added benefit of the vitamins and minerals from the outer skin of the almond. 

Not only are these cookies gluten free but they are also soy free and grain free as well.

Each cookie kit is handcrafted by MESI Woodshop & Spice House, featuring family-tested and approved recipes.

Servings:
Makes 24 (2 Dozen) delicious artisan thin and crispy cookies

Ingredients:
No additional additives or preservatives are used in this recipe:

  • Almond Flour
  • Brown Sugar
  • Cane Sugar
  • Semi-Sweet Large Chunk Chocolate Chips
  • Salt

Moist ingredients needed from your refrigerator:

Preparation Instructions: 

  1. In a large mixing bowl, combine:
    • 1 1/2 Teaspoons of Vanilla
    • 5 Tablespoons butter (cut into cubes)
    • 4 Tablespoons of Maple Syrup
  2. Add the Chocolate Chunk Overload Cookie Jar Mix to the mixing bowl
  3. Mix dry and moist ingredients until combined well and cookie dough is moist and sticks together. This may take a few minutes based on your mixer (Speed: 1  then 2) 
  4. Place Chocolate Chip Thins cookie dough in refrigerator to cool (while oven is heating)
  5. Preheat the oven to 350 degrees
  6. On 2 lined cookie sheet, "drop" a spoonful size of dough (small golfball size). Cookies will spread as they bake. Using your fingers and press dough down a little. The cookies will flatten during the last few minutes of baking)
  7. Bake cookies for 13-15 minutes or until flat and bubbly
  8. Let cookies cool for 5 minuets before enjoying (or they will fall apart)
